Fresh Tomatoes Means Fresh Salsa! Check Out My Simple Recipe.
It's time for some of my tomatoes to head to the food processor because we can eat only so many BLT's! And while salsa at your favorite Mexican food restaurant may be good, nothing beats salsa made garden fresh. Even with all store bought ingredients, the flavor of garden fresh is hard to beat.
You will need:
6-8 med-lg ripe tomatoes
2-6 fresh jalapenos (hot as you like)
1 med white onion
3 green onions
2 cloves garlic
1 green bell pepper
1 7 oz can chopped green chilies
1 regular size can tomato sauce
Salt & Pepper
In a large bowl, add finely chopped green onions and chopped green chilies. Do not process.
Pour in tomato sauce and add S&P to taste.
In food processor, Ninja, Vita Mix or similar, add a few quarters of tomatoes, 1/2 onion and small portions of remaining ingredients in batches and process to desired consistency. Add to large bowl and stir well.
You're done!
Sometimes I seed the jalapenos, sometimes not, depending on their heat. Have a glass of water ready and taste a slice! Also: sometimes heat increases as the salsa sits overnight...I love that.
Now grab some tortilla chips and dig in. I also love this ladled over a simple cheese omelette.
